Mother currently in an AL facility. Her medical condition will now require 24/7 supervision with private caregiver. The cost for that is insane, so we are considering renting an apartment and privately employing a live-in companion. Good idea? Bad idea? Shared experiences? All new to us, so any insight and advice appreciated. Thanks!

I can't imagine that renting an apartment and a live-in would fill the need of 24/7 supervision. There will be many hours of the day and week that need to be filled in by someone else. And people call or sick or need time off etc. so it can really get complicated, IMHO. That's why my mom is in AL.
With her in AL, I know her next stop will depend on what declines faster - her body or her mind. It's kind of a toss up. Anyhow, if/when her medical needs would require hiring aides to assist her in AL, she will need to be to a skilled nursing facility. If memory goes faster, she'll go to memory care. I suggest these same ideas for your mom.
Is the AL demanding that you hire these 24/7 aides as a requirement of staying there?

If you hire a live-in they are employees. You will need to deduct payroll taxes and supply a W2 form. They only work 40 hrs a week and get over-time. They get days off. Someone has to be there when they aren't working. I don't think it will be any cheaper in the long run. There will be utilities and groceries. And then the live-in you may not like. Some people have had a hard time getting a live-in to leave.
If there is a medical need, I’d go with a nh.
You shouldn’t need to pay another person to come in.
